Degree in Pharmacy with PhD in Food Microbiology (DiSSPA). During the course of research activities of doctoral studies, significant scientific advances have been obtained in the field of evaluation and analysis of intestinal microbiota in subjects presenting celiac disease and in the characterization of gluten-free foods with food by-products and plant waste containing bioactive compounds and natural antioxidants.
