Research activities are mainly aimed at improving the quality and safety of foods through the use and optimization of microbial biotechnologies, including fermentation of cereal and vegetable matrices, using microbial strains with peculiar technological and probiotic characteristics. Application of microbiological and chemical methodologies (HPLC), uni- and multivariate statistical analysis. She is involved in national and international projects/collaborations.
