Research focus: Improvement of the shelf-life and safety of foods (bread, vegetable, animal origin) through the probiotic/protective lactic strains application; Development of biotechnological protocols for the production of innovative ingredients and foods with improved functional, nutritional and sensorial properties through the use of fermentation processes by lactic starter. I’m authors of publications on JRC journals covering many aspects of Food science.
