Development of new wheat-derived foods of the Mediterranean diet with improved nutritional and health value

MEDWHEALTH is aimed at redesigning durum wheat-derived foods that are typical of the Mediterranean diet by using innovative genetic materials: i) a high amylose durum wheat line, to improve the fibre content; ii) a soft durum wheat cultivar, to improve the sustainability and the nutritional and technological quality; iii) a barley variety with high high ?-glucans content, to reduce glycemic index and blood cholesterol levels; iv) an elite lentil line with high protein content, to complement the biological value of cereal proteins and improve the products for fiber and mineral content. The project addresses the problem of non-communicable diseases, which is a major challenge according to the United Nations 2030 Agenda. MEDWHEALTH will evaluate the protective effect of the new foods on chronic metabolic and inflammatory diseases, and it will assess their production costs and the environmental impact.
