The overall objective of this project is to study the inhibitory capacity of selected LAB strains against pathogenic strains (STEC and enterotoxigenic MSSA and MRSA) in the meat chain and to investigate the molecular bases underlying the interaction of LAB ? pathogen in meat and in processing environments applying a genomic and a technological approach.
