Climate change increases food safety risks by promoting the spread of pathogens and introducing new hazards. MYMATCH focuses on how climate change affects certain mycotoxins?fungal toxins from Aspergillus, Fusarium, and Alternaria?in crops like maize, wheat, tomato, and nuts. The project, with a diverse partnership, aims to predict and reduce risks from these toxins, assess human and animal exposure based on diet, and establish effective risk management strategies. Through data collected from past studies, controlled environments, and field conditions, MYMATCH will build predictive models that anticipate changes in mycotoxin levels in EU food systems due to climate change. The end result will be an AI platform to support researchers, farmers, industry and policy makers with targeted predictions and solutions. MYMATCH tools will be co-created with users such as EFSA and adaptable to other contaminations.
